SCRDG’s AE, Michael Freed, worked with Greg Plummer of Concord Collective Partners to open coffee’s hippest, Alfred, in the new Delta Terminal 3 at LAX. This was a brand new space and with close management, the concept was able to open quickly despite conducting all work in an operating terminal. The restaurant boasts an almost 500 pound Swiss-made espresso machine. Alfred serves paninis and other food items and needed to do so without an external ventilation system, leading the team to source a high heat, programmable combi-oven that does not require a hood. SCRDG will partner with Concord Collective Partners on the next phase of the project – the addition of a cocktail bar to serve guests in later day parts – as well as on other venues within the airport.
